Platt says he was concerned that the larger dining room would make it harder to put out consistently fabulous food, but I didn't detect any flaws in my meals there. "It's a beast, this new space is," Platt says. "That's why I tell people that we're winning the war, but we've certainly lost some battles. The beast runs me more than I drive it, and staffing is always a concern, but we'll keep at it."
