Summer survival depends on barbecue. The grill sits there every day, luring you from your hot kitchen and complicated recipes. Marinated steaks, chicken breasts on the bone, ribs, kabobs, salmon, swordfish — mmmm. Barbecue is a rite of passage, and the Cook Street Culinary School of Denver will take avid grillers to a whole new level during today's Backyard Basics class.

Smoked trout with beet horseradish, Memphis-style Red Bird rotisserie chicken, grilled pizza margherite, grilled onions, potatoes and even pears will all become part of the students' new arsenal. The $79 classes will use both gas and coal grills.

Licking your lips yet? School runs from 11:45 a.m. to 3:30 p.m. at 1937 Market Street. And, as if the grillin' weren't cool enough, Great Divide Brewery will be on hand to offer insight into which brews to pair with your new recipes. Call 303-308-9300 to reserve your space.
