Does coq au vin sound like some sort of disease? If youre not a master of August Escoffier, the father of classical French cuisine, French Food for Springtime is the perfect class for you. Brought to you by the Alliance Française de Denver, which aims to raise awareness of French language and culture, the class will be taught by Alain Veratti, the chef and owner of the Crepes n Crepes restaurants in Denver. Seasonality is all-important in food, and spring is a wonderful time to learn some of the classical traditions from a seasoned pro. Veratti feels that in the U.S., the perception of French cooking is of sophistication and a high degree of difficulty...but in fact simplicity, freshness and the use seasonal food is the key to good French cooking. The class takes place at 6:30 p.m. today and repeats tomorrow at the Stanley British Primary School, 350 Quebec Street, where Veratti also owns a professional kitchen.
