Seasonality is all-important in food, and spring is a wonderful time to learn some of the classical traditions from a seasoned pro. Veratti feels that in the U.S., the perception of French cooking is of sophistication and a high degree of difficulty...but in fact simplicity, freshness and the use seasonal food is the key to good French cooking.
