"This time of year, a lot of us come out with heartier, small-batch beers made for the holiday season and colder winter months," notes Marty Jones, Wynkoop Brewing Company spokesman. Those brews were the inspiration for tonight's Holiday Beer Dinner at the Wynkoop, which will feature locally made seasonal beers from the Wynkoop, AC Golden Brewing, the Breckenridge Brewery, Dry Dock, Great Divide and Odell.
Wynkoop is still trying to decide which of its brews to feature, but "we have a couple of vintage beers from last year that we'll probably serve: Flying Artillery Brown Ale and a barley wine that's been aging in our barrels," Jones reveals. Breckenridge's Christmas Ale, Great Divide's Hibernation Ale, Odell's Isolation Ale and a Belgian-style golden ale from Dry Dock are also on the menu.
And executive chef Bart Proffitt has put together a meal worthy of such delicious drink, featuring red and gold beet salad with barley-wine vinaigrette; roasted butternut squash soup with chive oil; applewood-smoked ham with maple mustard sauce and roasted winter vegetables; and a Yule log cake with warm espresso custard.
