Tiny Bubbles

Here’s the thing, explains Lance Barto, executive chef of Strings: “Champagne has a stigma — namely, that it should be celebrated on New Year’s Eve and on special occasions with caviar, and the fact of the matter is that it goes just as well with everyday foods.” And that, adds Barto, is exactly what tonight’s Bubble-Q Patio Party is all about: pairing ritzy Moët & Chandon bubbles with “simple, rustic and approachable food.”

The dinner, which takes place on the patio, gets under way at 6:30 p.m. with a sparkling sangria reception, followed by four courses, all matched with more fizzy bubbles. Barto, who’s culling ingredients for the seasonally inspired board from the bountiful garden just outside the front door of Strings, as well as local farms, promises that the pairings will prove that champagne and fried chicken, for example, have every right to co-exist. “There’s absolutely no reason not to serve casual foods with champagne,” he insists.

Dishes include an heirloom tomato and cucumber salad, char sui pork belly with watermelon, radish and heirloom carrot slaw, seven-spice fried chicken with Olathe corn and a goat cheese and Palisade peach dessert.
