Eating, Drinking and Giving

Six years ago, Paul Reilly, executive chef/owner of Encore on Colfax, and his wife, Shannon, had triplet boys, all of whom were born prematurely and, sadly, passed away from complications. To pay homage to their boys, Paul and Shannon, along with several of Denver’s top chefs – Matt Selby (Vesta Dipping Grill and Steuben’s); Sheila Lucero (Jax Fish House), Aaron Whitcomb (Yia Yia’s Euro Bistro), Daniel Asher (Root Down) and Keegan Gerhard (DBar Desserts) – are hosting Eat. Drink. Give. 2.0 tonight. One hundred percent of the proceeds will benefit the Reilly “Treilly” team, which will walk at the Denver March for Babies on April 30 at Civic Center Park.

“I’ve found peace with our loss through cooking and partnering with the March of Dimes for events like these, and this is a nice way to honor my boys,” says Reilly.

The fundraiser goes from 6 to 9 p.m. at Encore, 2550 East Colfax Avenue, and includes tastes from all of the participating chefs; star-tenders Adam Dunbar (Encore), Kevin Burke (Colt & Gray) and Allie Geppert (Root Down) will pour libations.
