This city has dozens of formidable dough-slingers, but tonight at Marco’s Coal-Fired Pizzeria at the Vallagio at Inverness, 10111 Inver-ness Main Street in Englewood, and tomorrow night at Marco’s Coal-Fired Pizzeria Ballpark, 2129 Larimer Street, owner Mark Dym is parading the ingenuity of two of the most celebrated pizzaioli in the world: Don Antonio Starita and Roberto Caporuscio, both of whom are masters of their pizza domains, rulers of the piehole universe.

The two men will ignite their ovens as part of Dym’s Meet the Masters Dinner, complete with dough-making demonstrations, savory and sweet pizza offerings and an onslaught of Italian wines. Strata is a fourth-generation owner of Pizzeria Stratita, the oldest pizzeria in Naples, while Caporuscio presides over Keste Pizza + Vino in New York City, which nabbed the Top Pizza in New York accolades from New York magazine in 2009.

“This is a really, really big deal,” insists Dym. “Don Antonio has made pizzas for the pope, and he’s a rock star in the world of Neapolitan pizza, and Roberto has won numerous pizza competitions in Naples and all over the world. Between the two of them, it just doesn’t get any better than this.”
