Grab a Nalgene bottle, lace up your hiking boots, and get to the inaugural Trek to Table, a nine-mile hike on Arrowhead and Beaver Creek mountains led by hiking guides from the Beaver Creek Hiking Center. Today’s event is a fundraiser for the Vail Valley Foundation, and organizers want to make it as enjoyable as possible. To that end, there are routes with varying degrees of difficulty to choose from, and hikers will get to stop at four cabin restaurants that are part of Vail Resorts along the way. Each place is cooking up a special menu for the Trek.
Exec chef Curtis Cooper will serve breakfast at the 4,000-square-foot slopeside Broken Arrow. Hikers will then find mid-morning refreshments at Zach’s Cabin, followed by lunch at the legendary Beano’s Cabin, where chef Bill Greenwood will serve Colorado-inspired dishes. A spread of gourmet appetizers will be offered at Allie’s Cabin at the end of the day. “Trek to Table is a unique experience where participants can take part in a beautiful day of hiking while dining at Beaver Creek’s prestigious cabins along the route, all for a great cause,” says Kati Kasch, director of development and events coordinator for the Vail Valley Foundation. “This inaugural fundraising event will benefit the [Foundation’s] overarching mission of arts, athletics and education.”
