After reading about Los Carboncitos in the Denver Post, my wife and I went to the Sheridan store. And no, they don't serve chips there. But they do provide four kinds of salsa--all excellent. And they politely provided us with some broken tostadas to sample the salsas with. The food was terrific--we both had huaraches (mine with al pastor and hers with bistec y nopales [beef and cactus strips]) . We took our two daughters to the Pecos store a couple months later, and they don't serve chips there either. But they do serve the same four superb salsas (which, by the way, are meant in real Mexican food as a condiment, not something to be consumed by the bowl full on chips!). The food there was excellent too. If you want outstanding--and authentic--Mexican food (not merely a huge tortilla stuffed with meat and cheese and swimming in slop accompanied by all the free chips with spiced tomato sauce [salsa?] you can eat), then this is THE place to dine.

Los Carboncitos is one of the best free-chips-and-salsa joints in town, and we're amazed that they're still just giving this stuff away. Every meal here begins with a basket of fresh chips and a caddy of four free salsas running the gamut from merely hot to truly punishing. Honestly, we've considered on many occasions stopping in, eating a whole basket of chips for lunch and then just walking back out again. And yet every time, the chips and salsas act like blood in the shark pool -- stoking our hunger, firing our appetite and causing us to end up ordering more huaraches and soup than any one person could reasonably eat in a single sitting.
