It's a measure of how far this city has come in the pursuit of dangerously untested culinary thrills (the eating of seitan, the serving of meals made of nothing but vegetables, creating a Buffalo wing made of tofu, which does not have wings) that a place like WaterCourse Foods — where all of these high-wire gastronomical games are played daily — now attracts more than just a dedicated clientele of twig-and-berry vegetarians, vegans and other ascetics. Although the restaurant can still look like a game preserve for the final holdouts of Denver's chipmunk-hugging Earth lovers, it's attracting a growing crowd of diverse diners — many of whom have a common goal: breakfast. Granted, a breakfast here must be eaten sans bacon, ham, hash or sausage (the four primary elements of any proper breakfast equation), but if you must go pig-free, WaterCourse is the place to go.

I am a vegetarian too, and have tried Watercourse time and time again. I go there knowing I can choose anything on the menu (a big deal for a vegetarian) but also knowing that it will take 3 hours to get in and out on a Saturday around brunch. I'm not exaggerating. I totally agree with the comment about the servers. The amount of people at Watercourse shows that if a really fabulous veg restaurant were to arrive in Denver, it would have plenty of business.

I am a vegetarian and believe me, restaurants are few and far between that offer the choices that this restaurant offers. I really wanted to support it! However, I have given up going to this restaurant because the servers are so consistently bad - I mean REALLY bad. The pretentiousness is getting a little much as well. I mean, okay, dreadlocks and pachuli are fine, but it seems like some of the staff are trying just a little too hard. The last straw occured when the woman checking people in stood and chatted with another woman for 8 full minutes while people stood and waited for her. Not only did we have to wait, we had to listen to her endless gabbing about her inane life experiences. . . It was really unbelievable! And when someone interupted her to ask, "er, is this where you check in?" (in other words, "er, do you work here?")she was so obviously put out- even rolling her eyes. It all just left a sick feeling in my stomach. The wait staff seems to try sporatically, but the wait for food combined with the attitude is just not worth it for me. I don't want to go to a restaurant, or anywhere for that matter, run by employees that feel like they are doing me a favor. My money is worth more than that.

I love it how Watercourse doesn't have a recycle program for their all natural trash. Everything gets thrown out together. When I walk in front of the store and see all these people laying in the grass, I want to vomit.

The Buffalo Seitan wings are NOT made of Tofu... whomever wrote this is obviously not aware of the fact that seitan and tofu are not the same thing
