Bison are the largest land mammals in North America, and they have the richest cultural history (just ask the elected officials pushing the National Bison Legacy Act, which would make the woolly beasts our national mammal). Bison are so big, in fact, that MCA Denver needs two full days for its second annual Art Meets Beast festival.

“We got a lot of positive feedback last year,” says MCA programming director Sarah Baie. “It was interesting, because a lot of people had never really thought about where their meat came from, so it was a way to talk about food in a broader sense.” This year, the discussion will be expanded to include not just meat, but other kinds of food, as well.

Art Meets Beast begins tonight at 6:30 p.m. with a workshop led by Pete Marczyk of Marczyk Fine Food, who will carve an entire bison; the vegetarian option is a film with food porn and archival food footage by filmmaker Kim Shively. Tickets are $5.

Tomorrow kicks off at 10 a.m. with a free 4H farm-animal showcase presented by the Urban Farm. That will be followed by a bus tour from noon to 3:30 p.m. ($55) that starts with lunch at the Kitchen Denver and includes stops at Happy Farms, the MM Local fruit and vegetable cannery, and Denver Beer Co.

The day ends with a 7 p.m. six-course feast at the MCA, 1485 Delgany Street, at which six local top chefs (Jamey Fader of Lola, Keegan Gerhard of D Bar, Troy Guard of TAG, Max MacKissock of Squeaky Bean, Jorel Pierce of Euclid Hall and Sean Yontz of El Diablo and Sketch) will serve dishes created with Marczyk’s bison.
