Ramon Campos, owner of Empanada Express Grill in Golden, hopes to have his second restaurant open by tomorrow, Christmas Eve at the latest. The new spot is taking over the former home of a Mexican joint at 4301 West 44th Avenue, just off Tennyson Street.

And even if the doors aren't officially open, Campos will be filming a cooking demonstration at the new spot tomorrow, which he says will air on Fox 31 sometime between 8:30 and 10 p.m. December 23.

Campos had hoped to open this second space in the first week of December , but the usual restaurant opening delays got in the way. The new restaurant will seat thirty to forty and have a few menu additions to those already offered in Golden, including goat meat empanadas and arepas.

Campos is still trying to secure a liquor license for his Denver restaurant; the Golden spot does not have one. Liquor or not, the new location will have the same hours as the original: 10:30 a.m. to 8 p.m. daily, and with any luck, Campos will add a food truck to his empire by next summer.
