Broadmoor chef and sommelier win national Copa Jerez title

Bertrand Bouquin, executive chef of the Penrose Room and Summit at the Broadmoor in Colorado Springs, and Broadmoor wine director Timothy Baldwin have a date in Jerez, Spain, in January 2011 -- when they'll compete against international chef and sommelier teams for the Copa Jerez title.

They won the chance to represent this country at a food-and-sherry pairing contest sponsored by the Sherry Council of America in New York last week, going up against chef/sommelier teams from the Bazaar, Casa Mono and La Boca.

"We are thrilled that we were able to accomplish what we came here to do. We look forward to representing the United States," says Baldwin. Their winning pairings in New York featured a Fino, an Amontillado and an Oloroso sherry; in Spain, they'll present their three-course entry to a panel of international judges.
