Danny Wang and Betty Fey opened Caution in April as a production facility supplying beer to Lao Wang, a noodle house owned by Wang's parents, and have since expanded, adding several more restaurants to their portfolio: Wynkoop, Ale House at Amato's, the Kitchen Next Door and, at the end of this month, the Cedar Creek Pub in Aurora's Fitzsimons hospital complex.
"We had a different business model to start with, and we wanted to get our feet wet, as it were, to learn about production and distribution," says Wang. But when the space next door to their brewery became available, Wang and Fey jumped on it. "We didn't want to run a tap room when we started, but now that we have settled in, it's a good time to do it."
The tap room, at 12445 East 39th Avenue, will be small, but it will a comfortable place to go, Wang says, with five taps, two of them with rotating beers and three with mainstays.
Caution's most popular beer so far is its Honey Matrimony, a brown ale made with wildflower honey from Clark's Honey Farm in Evans and malts from Colorado Malting Company in Alamosa. It also makes Lao Wang Lager, a proprietary beer made with a secret blend of Asian spices and served at the Noodle House, and Toasted Black Bat, which will be almost exclusively sold at Cedar Creek Pub.
With the new tap room -- which Wang hopes to have open by June -- Caution will need to brew more beer and more styles, so he's buying a new ten-barrel fermentation tank. The tap room will probably only be open on weekends, at least to start.
