Earlier this week, we reported that Max MacKissock, exec chef of the Squeaky Bean, would be leaving his position at the restaurant that shot to stardom in Highland and rocketed to national glory when it reopened in a brand new space in LoDo last year. On Monday, when we ran the story, uber-talented Theo Adley, the former chef of the now-closed Pinyon in Boulder, was a frontrunner to take over the line: "It's a great opportunity, and we have a meeting this afternoon to talk about everything," Adley told me on Monday morning.

But earlier today, Adley sent me a text that simply said: "I'm not going to do it." And not long after that text came a longer explanation on Adley's Facebook page.

Says Adley:

Despite the rumors circulating, I will not be joining The Squeaky Bean team. I have nothing but respect for all the amazing work Johnny Beans, Stephen Gallic and Max MacKissock to push Colorado dining further, but at this juncture it would not be the right fit for me. I thank them all for considering me a suitable replacement for Chef Max, which is in and of itself very humbling and a great honor. I can't wait to be a part of Colorado dining again and i thank everyone for their kind words of support during this decision making process.

A very classy response from a classy guy.

But the question still remains: Once MacKissock leaves, who's going to take over the kitchen? Any nominations?
