Colt & Gray, the new farm-to-table gastropub at 1553 Platte Street, was meant to open its doors and roll out its effin' killer menu over the Fourth of July weekend, but much to my disappointment, the opening has been delayed. "We were hoping to do a soft opening over the Fourth, but that didn't happen," owner Nelson Perkins told me. "We're waiting on our certification of occupancy, which we hope to have by July 13. If that happens, we'll  have some soft openings next week, then a hard opening the last week of July. We're trying to make sure we have all the details nailed down before we open."

Yeah, whatever. Could you please just hurry? When it comes to a menu that pimps charcuterie, I'm not a patient person.
