Roostercat Coffeehouse will soon open as a fair-trade, farm-to-table coffee shop in a funky space at 1045 Lincoln Street.
"I like the social aspect of the coffee shop," says co-owner Colin James Floom. "You can bring your laptop, grab a cup of coffee and just hang out." And Roostercat will offer three -- count 'em, three -- patios for relaxation and java; one out front equipped with a fire pit, one out back, and one on the rooftop with a 360-degree view of the city. And you'll be able to hang out until midnight on Friday and Saturday.
All of Roostercat's fair-trade brew, including an exclusive Roostercat blend, will come from local roaster Coda. And all of Roostercat's salads, sandwiches and even waffles can be ordered gluten-free or otherwise "allergen-friendly," Floom says. "All of our coffee comes from a local roaster; all of our food is local," explains Floom, who by day works as a filmmaker for MTV. "We're trying to support local farms and coffee."
If all goes according to plan, expect Roostercat to be open by the end of July.
