Carne asada fries are a particular specialty of the beach shacks and taquerias of San Diego and the surrounding southern California scene, where the influence of Mexican cuisine has been present for longer than California has been a state. Fast and greasy is the standard, but at North County in Lowry, chef and proprietor Sterling Robinson takes cooking seriously, even when presenting a dish that skews just the opposite of serious.

It all starts with a mound of fresh-cut fries sizzled to a perfect golden-brown crunch, with interiors so soft and fluffy they almost seem hollow. Add to that a four-cheese queso sauce that straddles the line between a fancy-sounding mornay and finger-licking yellow goo. But the marinated and chopped steak grilled over screaming hot Japanese oak charcoal takes these carne asada fries from the realm of drive-through junk food to something a little more special but just as fun.

To up the messiness factor, North County throws in a scoop of simple guacamole, zigzags of Mexican crema and a pelting of cotija crumbles. There's a little pico de gallo tossed in, too, adding just enough tomato, onion and cilantro to brighten the dish — and it also counts as a vegetable serving. For an extra buck, you can get a side of delicious masa-thickened green chile, which we recommend. The preparation and care evident in
each ingredient doesn't make this a gentrified version of a street-food classic; it just makes each bite more delicious than the last. 

And here's an insider tip: ask for the off-menu California burrito and you'll get your carne asada fries wrapped in a house-made flour tortilla.
