A multi-level, cavernous sports bar tucked away in a South Denver strip mall, W.T. Shorty's has a dark wooden interior that feels like an adult version of Casa Bonita. Instead of cliff diving, though, there's a massive, three-sided center bar backed by a wall of flat-screen TVs. Each seat in the house seems positioned for game watching, including the huge, covered and heated smoking patio -- which comes with TVs, too. Nooks and crannies hide booths, pool tables, darts and video games, each winding turn yielding a new spot for patrons to sit and shoot the breeze. But the bar is the center attraction, where regulars belly up for booze and a heavy menu of hot wings in spicy and sweet varieties; homemade ranch kettle chips; and items like the "taco pizza," a pie piled high with ground beef, salsa, cheese, black olives and tortilla chips. http://www.thewalnutroom.com You can slum it with a slice and a drink for $5 at just about every pizza joint in town, but when you want to slum it in style, either location of the Walnut Room feels your vibe. At lunchtime, a fresh-faced server, usually of the hipster sort, will trot out an eight-inch, thin-crusted pizza topped with whatever single ingredient tickles your fancy, a cup of soup or a house salad scattered with mozzarella, and a soft-porn beverage. If you're not a proponent of pizza, not a problem: You can order a half a sandwich instead, including the "Fat Bastard," heaped with provolone, five meats and a few scant vegetables to soften the guilt (or impending coronary). If you happen to ask where, exactly, the Wash is, a giddy bartender is likely to give you the answer: unincorporated Adams County. That hazy zone suits the joint just fine, as it toes the line between sports bar, dive, dance joint and billiards room. Whatever your pleasure, the Wash -- so named for its location on Washington Street -- offers a happy hour Tuesday through Saturday with specials on pitchers, bottles, drafts and wells. (There isn't really food at the joint besides the odd bar-pizza company that pops up at places like this.) (There's also a late-night happy hour.) The large space has been revamped and is a sleek spot, not only for thirty-something after-work drinks, but also for lunch or dinner. So when two sons of the store's founder opened Waterloo in downtown Louisville in 2007, they brought with some of the store's hipness, some of its memorabilia and borrowed the logo as well. A neighborhood restaurant, bar and live music venue, the spot brings in live local music three days a week and also has a weekly acoustic open mic night. But the bar has aged well, and no place works better when you need a place to crash-land for a couple of hours, a couple of years, a lifetime. It's seen some famous faces (and has even been owned by one, John Hickenlooper), but has also served 10,000 times as many nobodies. And the food here, especially the burgers and pizza, is far better than you'd expect, exactly the sort of grub that goes perfect with a beer, a shot and a long night out with friends. The bar is stationed in an underground tavern filled with couches, chill-out areas and a flare for ambient lighting. Other than the large dance floor, attendees are quickly drawn to the club's most prominent feature: a small lounge area filled with comfortable chairs and wooden tables. http://www.williamstavern.com Williams Tavern is a no-frills joint on the 17th Avenue Uptown drag, a discreet bar sitting within a strip of ever-changing storefronts. The sparsely adorned spot has a pool table and a dartboard, but most folks just come to drink, a mix of suits and baseball caps crowding the place during the weekend. The only thing sticking out from the low-key decor is a handful of church pews running along the middle of the tavern, but the odd seating choice goes unnoticed when the bar fills up. To create Williams & Graham, bartender Sean Kenyon and Todd Colehour transformed a ramshackle flophouse into a stunning speakeasy, with a high tin ceiling that dates back to 1906 (they took it through a car wash to clean off decades of grime), cozy booths, and an actual bookstore entrance, where you can buy cocktail books, the works of famous drunken authors (think Hemingway) and bar tools. But the focus is the big wooden bar, which has a drink menu featuring vignettes, anecdotes and profiles of spirits written by prolific bartenders from around the country, as well as a roster of simple, elegant cocktails that can be paired with dishes off a small menu of four appetizers, four entrees and four desserts. "I don't want this to be a 1920s theme park; it's a 1920s-themed bar," says Kenyon. "We don't want it to be stuffy, and everything's fresh behind the bar.
