Once the Dorchester's kitchen closes on Fridays and Saturdays, the black curtain that separates the spaces opens to include the sleek and posh Privé, the Dorchester's bar, and the 4,000-square-foot rooftop patio, which has cabanas, communal tables and bar seating. Privé is similar to spots in Chicago and Miami whose daytime restaurant vibe transitions into a club experience at night. Privé boasts an elevated DJ booth, a Funktion-One sound system, U-shaped sofas and high-end bottle service.
