Rarely does a restaurant turn heads for what it doesn't include on its menu. But that's the case at Bamboo Sushi, an outpost of the Portland, Oregon, chain that originally opened in Avanti F&B in May 2016. The Marine Stewardship Council named Bamboo Sushi the first sustainable sushi restaurant in the U.S., so you won't find unagi or bluefin tuna on the menu, as they can't be sourced responsibly. What you will find are impeccably sourced salmon, albacore and jackfish in the form of nigiri, fanciful rolls and even nachos with yuzu guacamole. Bonus: Hard-to-find okonomiyaki (Japanese omelet) also appears on the menu. Bamboo is relocating to a permanent restaurant at 2715 17th Street in the winter of 2017.
