Black Cat chef-owner Eric Skokan is a details man. Everything in his well-designed restaurant is carefully put together, from the clean, comfortable decor to the ingredients, preparation and presentation of every dish. Not content to just pay lip service to the idea of farm-to-table cuisine, Skokan produces the majority of vegetables used by the restaurant year-round, as well as sheep, hogs and chickens, at his farm, Black Cat Farm. Skokan is at the farm every day selecting produce, so the menu changes daily, but the results are always complex, sophisticated and surprising.
