Billed as a New American bistro, Charcoal Bistro has more in common with its now-shuttered sister restaurant, Charcoal, than with the typical mid-level joint conjured up by the category. Although the original tilted more European and fine, this friendly followup from owner Gary Sumihiro and executive chef Patrik Landberg is clearly cut from the same cloth. Breads, from buttery brioche to ciabatta, are made in-house. Fries are meaty and hand-cut. Proteins are generous, approachable and thoughtfully sourced. Microgreens make frequent appearances. Don’t miss the half-pound burger with fries, the bacon-wrapped dates with green-tomato jam, or anything from the sea, be it from the raw bar or flaky Icelandic cod; Landberg is from Sweden, after all, and has a knack for fish and shellfish. Another benefit: Weekend brunch has given Wash Park residents new reason to rejoice.
