Chef Lon Symensma moved to Denver from New York City to unveil ChoLon in 2010. It wasn’t long before every soul in town had tried — and swooned over — Symensma’s French onion soup dumplings and kaya toast with coconut jam and egg cloud. ChoLon gave Denver something new: a menu that balanced the exotic with the familiar in dishes built for sharing. After a decade, the restaurant feels like a mainstay of the Denver dining scene, and now there’s a second location with a family-friendly menu in Central Park, too.
