As anyone who's tried to cook an omelette at home knows, the dish might seem easy to make, but it's not. You'd never know this, though, from the dishes flying out of the kitchen at Early Bird Restaurant, a quaint breakfast-and-lunch spot that opened in Westminster in the summer of 2012. Chef-owner Daniel Cofrades cooked for Pope John Paul II while at Michel Rostang in Paris, and it's just possible he received a papal blessing that conferred the ability to cook perfect breakfasts. His wife Kristen is an instructor at Johnson & Wales, and much of Early Bird's staff hails from the institute. Both the Cofradeses are longtime chefs who share a commitment to organic, locally sourced ingredients. And they have a way with eggs -- not just in omelettes, but in eggs Benedict and huevos rancheros, too. While Early Bird serves other breakfast items (notably the savory supper waffles) as well as lunch, the egg dishes are all they're cracked up to be.
