The southern outpost of chef-owners Daniel and Kristen Cofrades' popular Westminster breakfast joint has a leg up on its older sibling: This location has a liquor license. The kitchen sends out dishes just as scrumptious as the original location, but they can now be enjoyed with a Bloody Mary or whiskey-spiked coffee. Daniel Cofrades cooked for Pope John Paul II while at Michel Rostang in Paris, and it's just possible he received a papal blessing that conferred the ability to cook perfect breakfasts. His wife Kristen is an instructor at Johnson & Wales, and much of Early Bird's staff hails from the institute. Both the Cofradeses are longtime chefs who share a commitment to organic, locally sourced ingredients. And they have a way with eggs -- not just in omelettes, but in eggs Benedict and huevos rancheros, too. While Early Bird serves other breakfast items (notably the savory supper waffles) as well as lunch, the egg dishes are all they're cracked up to be.
