The building housing Euclid Hall dates back to 1883, when it was the home of a pioneering doctor. After that, it was used by the Masons, the Colorado Women's Relief Corps, the Cootie Club and Maudie's Flea Market; according to legend, it was also once the headquarters of a brothel catering to government officials and members of the media. No, that wasn't Soapy Smith's Double Eagle Bar, which served suds to a generation of Auraria students. But now, as the third restaurant operated by chef Jen Jasinski and Beth Gruitch, who already have Bistro Vendome and Rioja around the corner in Larimer Square, this venerable building has found its best use yet. The renovated space is stunning, open and modern, a perfect setting for Jasinski's interesting, upscale tavern cuisine -- everything from sausages to grilled-cheese sandwiches and poutines. The bakery for all three restaurants is located here, and turns out some top-notch desserts; there's an innovative roster of wines, cocktails and beer to wash everything down. And the owners clearly know how to reward hardworking restaurant employees: Not only does Euclid Hall stay open when other places shut down, but industry people always get the happy-hour drink deal.
