"It didn't make sense, at first, to put a restaurant in the middle of nowhere," says Bob Blair, the chef/owner of Fuel Cafe, which he opened in the middle of nowhere in early 2008. But how could he have known that his restaurant would make this spot in River North, by the Taxi project, a real destination? People now flock to Fuel for breakfast, lunch and dinner; for pastries and coffees and sandwiches and salads; for the Mediterranean-inspired dinners, from small plates to big, meatier entrees; or just to sit outside on the expansive patio, a true urban oasis, and watch the Platte River -- and the traffic -- go by.
