Chef Mary Nguyen is no newcomer to the Denver scene. Her first Denver restaurant was the beloved, now-shuttered P17, which satisfied with Vietnamese-French fusion for over ten years. In late 2013, Nguyen added Olive & Finch in Uptown to her portfolio. It's a European-style cafe that’s also a bakery and mini-market. The space is charming, with reclaimed-wood benches that fringe the perimeter of the room, a twelve-seat handcrafted community table, and circular shadowboxes nesting with birds -- finches, of course, and owls -- as well as weathered-tin letters that spell everything from "food" to "Olive and Finch" sitting on the shelves. Nguyen stresses that this is a neighborhood bistro, not an upscale restaurant. "I want people to come in, get a cup of coffee and plug in their computers, and if they want to camp out for three or four hours, that's perfectly okay,” she says. “This is a community-driven cafe, and we want people to feel like they're a part of that community." Try the Nanner's (prosciutto, brie and arugula) or the Greggers (braised tongue, garlic purée and caramelized onion) sandwiches; both are almost as fun to say as they are to eat.
