The tag line at Relish -- "Colorado Inspired Cuisine" -- is a three-word summation of the trend starting to break through with some of the area's more forward-thinking chefs. At Relish, Matt Fackler has created both a restaurant and a menu that showcases Colorado at its best. The food here is not dogmatic, Colorado-only cuisine, but cuisine inspired by the land, the tastes of the people living on it, the flavors of product taken from it. And the kitchen is one of the top in the state.
