Chef-owner Justin Cucci opened Root Down in 2008 in what is still one of the coolest spaces in town: a recycled old gas station, filled with retro chic and an unbeatable bar inside, and a stunning view of the Denver skyline outside. The kitchen emphasizes locally sourced ingredients, and Cucci's growing some of his own in the eatery's two gardens. In addition, Root Down provides a gluten-free or vegan option for nearly every dish on its menu -- making it one of just a handful of high-end restaurants in town to do so -- and even hosts a raw-food night once a month. But omnivores will still find plenty to love among such offerings as Colorado rack of lamb, risotto with carrot-chorizo emulsion, and a delightful coconut-ginger fizz spiked with gin.
