The road to ramen leads to Sachi Sushi, a surprising spot up in Niwot. That's because on Sundays, this cordoned-off area of the Niwot Market, with its handful of tables and a sushi counter, becomes one of Colorado's best bets for brimming bowls of authentic, Kyushu-style ramen, toothsome noodles steeped in sticky tonkotsu broth. While the ramen is only offered on Sunday, on that day and every other day of the week (except Monday), owner Tsukasa Hibini, a native of Japan who spent three decades in the sushi business in this country, turns out equally impressive Japanese specials, as well as sushi that's basic in concept but excellent in cut and quality.
