This is the first of five Tuk Tuk eateries to translate the Thai street-food concept into American fast food. The dishes all celebrate freshness, flavors, textures and colors, with an emphasis on noodle bowls, grilled or barbecued meat and chopped-to-order salads. Spend a few minutes with the sushi menu as well, which offers sashimi and nigiri in addition to rolls -- a welcome surprise for a fast casual joint.
