Authenticity is the goal at Uncle Joe’s, a downtown restaurant founded by Dr. Dennis Law, a former surgeon and entertainment mogul who got into the restaurant business when he opened the first Uncle Joe’s in Hong Kong. Not all dishes are straight out of Hong Kong, but the best ones are, such as cha shao, a classic dish of barbecued pork with a sweet and spicy lacquer that the real Uncle Joe (aka Dr. Law’s father) credited for his longevity. Thinly sliced American wagyu is as tender as if it were braised, not just wok-tossed in a robust apple-Asian pear barbecue sauce. Fiery Sichuan peppercorn oil, which slicks everything from vegetable side dishes to entrees with its reddish hue, makes you want to track down the generations of cooks that trained us to associate Chinese food with syrupy sesame chicken and demand explanations. Taste it carefully and you’ll discover spices (cardamom, charred ginger, anise) and citrus (dried orange peel) underneath the numbing heat.
