The brothers behind Basic Kneads drew knowledge from oven-makers in Italy and Mexico, to customize their own mobile pizza hearth, erecting a unique piece, complete with a soapstone hearth and attached hand sink. They haul that trailer around town, turning out pizzas made with hand-crushed tomato sauce, a mix of fresh mozzarella and Parmesan, and crusts perfected after months of experimentation. Rather than importing from Italy, though, they get their ingredients as locally as possible. The brothers also use seasonal produce as inspiration for their pies, incorporating non-traditional flavor combinations into their offerings. The pizza vendor focuses on sustainability in all aspects of its business, using wood scraps to fuel the fire and serving its menu with utensils made from compostable material.
