Rayme Rossello had just opened her first brick-and-mortar restaurant in Longmont when she got the call to put a Comida Cantina in the Source, an ambitious new project planned for a very old building in RiNo. At the time, Rossello had her hands full – but then she reconsidered, and when the Source opened in the summer of 2013, another Comida Cantina was front and center in that cavernous space. And that was a very good thing for the Source, because this restaurant brought a party atmosphere to the place. The casual, free-flowing Comida Cantina is full of happy energy – not to mention cheap beer, strong drinks and good food, including variations on the tacos that Rossello first served out of a food truck. Soft tacos are the mainstay here, with creative touches that blend her love for Mexico with her Southern roots. But the real stars are the griddled tacos -- folded-over corn tortillas stuffed with flavorful meats and cheese, then laid on a grill until the cheese oozes out and crackles in rich, chewy bits.
