When you’re in the mood to dine with distinction, there’s no better place than Ellyngton’s. Tucked into a corner of the Brown Palace, this restaurant is all old-world swank and old-school class -- a bastion of the sort of jacket-and-tie dining that's becoming rare in this fast-casual world. Prices are expensive, but the experience is worth it during those moments when kitchen, floor and wine staff hit on all cylinders together. Breakfast and lunch only, but the Sunday brunch is a real blowout, and it’s a relative bargain considering the size of the spread.
