The building that's home to this dining stronghold overlooking Boulder was erected as a cabin in the 1920s, then became a restaurant a decade later. When Don Monette purchased the place in 1971, he refined it into a world-class, high-end dinner destination. But time has hardly stood still at the Flagstaff House. In 1985, Don's son, Mark Monette, returned to Boulder to helm the kitchen at his family's restaurant, and he's been there ever since, working tirelessly to keep the kitchen on the cutting edge. Although today the decor still smacks of a late-'90s remodel, the menu is as fresh and interesting as it's ever been, integrating both European and Japanese influences into a seamless, multi-coursed fine-dining experience that's heightened by impeccable service and a wine list that is both broad and (20,000 bottles) deep.
