Before he got tied down to one place, Kevin Morrison took his idea out for a road test. He created Pinche Tacos, a food truck devoted to turning out slightly upscale versions of street tacos, and quickly found fans across town. Those fans were so ardent that Morrison was soon able to open two brick-and-mortar spots, a Pinche Taqueria in Capitol Hill and a second in LoHi, which opened in early 2013. As with the truck, the fare in these restaurants focuses on street tacos β but at the truck, you donβt get the bonus of tequila and whiskey.
