Noel Cunningham is more than a cook; he's Denver's culinary conscience. For over twenty years, he's been making very good things at Strings, his new-American restaurant and a true community institution. Although these days he's pouring a lot of his energy into good works -- both here, where he hosts numerous charity events, and in Africa -- you don't have to be a do-gooder to appreciate his efforts. His kitchen's care shows in every bite of sweetbreads, tuna tartare, seabass and even the liver and onions.
