Although chef Ian Kleinman had worked in kitchens for years, he really made a name for himself after he ventured into molecular gastronomy, surprising diners with a range of textures and temperatures and odd flavor combinations. And when he rolled out his mobile cart, the Inventing Room, he drew inspiration from both science and Willy Wonka to create a line of street-smart desserts. That cart proffers mostly liquid nitrogen ice cream and sorbet, topped with such marvels as pop rocks, exploding whipped cream and whipped marshmallows, but there are also such surprises as a cooling watermelon soup. Also available for catering and parties, the Inventing Room makes regular stops at Civic Center Eats, the Tiri's Garden food pod and Justice League events.
