No booze, no tables, no servers, no menu other than what’s taped to the wall beside the register. But despite that lack — maybe because of it — Chubby’s, the original Chubby’s, is an institution in Denver, particularly beloved by those who have overindulged on a Friday night. The Mexican food here is heavy, salty, occasionally greasy and comes with a green chile unlike any other green chile in the state — a gelatinous orangey-brown goop hot enough to strip paint and powerful enough to burn off the worst effects of even the most over-enthusiastic immoderation.
