The idea that going to a restaurant means you'll be sitting at a table in a dining room is rapidly going the way of the dodo. Right now you can eat your dinner inside a shipping container, be seated inside a concrete culvert and grab a cocktail inside a walk-in freezer — and that's just in Denver. In Boulder, head to the library if you want a good meal. Seeds, which set up shop in spring 2015 inside the Boulder Public Library, offers a light menu of sandwiches, salads, pastries and coffee. And since it's a partnership between the Boulder Farmers' Market and the City of Boulder, dishes are heavy on seasonal veggies and local inspiration.
