No. 19: Mongolian BBQ Duck Buns at Linger

Although Linger is housed in what used to be part of the Olinger Mortuary, these Mongolian BBQ duck buns are anything but deadly. In fact, you might consider them life-savers, especially if you indulge in the $5 order available found during happy hour. To get in on this deal, head to the roof or bar between 4 and 6:30 p.m. Monday through Friday, and start ordering the delectable duck buns, a dish so good you'll want to order it twice, maybe three times. The lightly seeded bread comes stuffed with shredded duck as well as fresh scallion and miso-pickled cucumbers.

Unlike traditional American barbecue, the duck is stir-fried on a large, open grill — the way the Mongolian people have always cooked meat and still do today. It became a popular method of cooking in Taiwan in the 1970s, then continued to move around the globe as more cultures picked up "Mongolian barbecue." No matter how this dish is executed, the idea of cooking thinly sliced meats in Asian-style sauces remains the same — but Linger chef-owner Justin Cucci has given this Mongolian BBQ dish his unique twist as part of his play with global cuisines.

The spices dressing the tender duck prove heady and rich with just a touch of sweetness, harmoniously meshing savory umami with succulent ripe plum. And then you have the Chinese steamed bun, a joyous pillow of perfection that houses the meat and refreshing pickle as though they'd been born together. Did we mention you will want seconds? That's fine, Linger has plenty. And if you miss the happy-hour special, the buns go up just fifty cents during normal business hours.

We're counting down the best dishes in the city in advance of Westword's Dish event on September 20 in Sculpture Park at the Denver Performing Arts Complex, where many of our Best of Denver winners — along with other favorites — will congregate to serve up small plates. If there's a dish you think we need to try, tell us about it in the comments section, or shoot us an e-mail at [email protected].
