Number 31:Salumi from Il Mondo Vecchio

Mark DeNittis is Denver's salumi god. He, along with partners Adam DeSacco and Gennaro DeSantis, have bestowed us with Il Mondo Vecchio, the state's first (and only) USDA-inspected salumeria, which is sterile and stark and cold, none of which matters in the slightest, because the hand-crafted meats that DeNittis and his cohorts are curing may very well be the most delicious meats your lips have ever kissed. During the tasting tours, which must be arranged in advance, DeNittis will seduce you with the best pepperoni you've ever tasted, make you kneel in gratitude just from the scent of the longanzia spiced with garlic, paprika and hints of citrus and induce sighs of rapture from sampling the duck breast prosciutto, veal pancetta, guancie baciate, vino e pepe and whatever else DeNittis is excited about, which is usually everything. There's no retail space and no cafe (although there's talk of doing both in the future), but you can order the meats directly from the Website, or register for an upcoming class, which sounds like the right idea, considering that the next class, slated for Saturday, February 27, is all about breaking down the whole hog -- and eating it.
