Ask the readers: Cheese crisps in Colorado?

While Jason Sheehan is taking readers' questions, I have one for readers: Is there a place in Colorado that serves cheese crisps? These thin, grilled quesadillas covered with melted cheese are staples at Mexican restaurants in Arizona. (I just had one at El Charro, a Tucson institution since 1922, and another at Mi Nidito, which is thirty years younger but touts Bill Clinton as a fan.)

But while quesadillas abound on the menus of Mexican restaurants in Colorado, I have yet to see a cheese crisp in Colorado. Our Mexican restaurants, of course, have perfected green chile -- which you never find in Arizona -- so it's probably a fair trade. But still: Anyone know of a spot in this state that sells cheese crisps?
