Buenos Aires has cut itself another piece of Colorado's dining pie.

Four years ago, Francis Carrera gambled on Buenos Aires Pizzeria, an Argentinian pizza joint that he opened in a modest storefront at the then-unhip address of 1307 22nd Street, just off Larimer.

And then he gambled again in June 2006, when he opened Buenos Aires Grill at 2191 Arapahoe Street, the former home of La Coupole, in a large, historic building that was as lovely as its surroundings were not.

Against all odds, both Buenos Aires outlets in Denver have survived, if not thrived. And now, for something completely different, Carrera has opened a restaurant in Aspen, Buenos Aires Fusion at 308 South Hunter Street, where he serves up traditional Argentian fare.
