A Cuban-American from Miami whose family didn't allow her to go to college - "Cuban moms are strict," she explains - and who had little restaurant experience, she opened Cuba Cuba Cafe & Bar in the Golden Triangle in 2001, and it quickly became a hot spot. A decade later, she introduced a fast-casual sandwich-shop spinoff in Boulder: Cuba Cuba Sandwicheria.By the time the concept came to Glendale, Socarras Bigelow had a new partner, a restaurant-industry veteran who saw big potential in the idea; the new sandwicheria also had a couple of improvements over the original in Boulder, including a friendly bar area that serves up a mean mojito. "This area is rocking, and, well, it could use some great Cuban cuisine," says Socarras Bigelow. "Every neighborhood needs Cuban cuisine."
And that definitely includes the Denver Tech Center, where Cuba Cuba Sandwicheria is now open daily from 11:00 a.m. to 9:00 p.m., with happy hour from 3:00 to 6:00 p.m. Watch out for those mojitos.
