Fate Brewing opened in February without a brewhouse, but the Boulder joint, which includes a full-service restaurant and bar, remedied that situation a couple of weeks ago by installing its ten-barrel system. And yesterday, it tapped its first beer, American Stout.

One of five core beers that Fate plans to make, the stout is "an Americanized version of a Foreign Extra Stout," according to a statement from head brewer Jeff Griffith. "It has a strong coffee-like roasted barley flavor and prominent roasted malt aroma. The American citrus hops lead to a brightness on the palate with a moderately dry finish. This rich stout pairs well with hearty fare like steak, BBQ and chocolate desserts."

Over the next few days, Fate will roll out the rest of its core lineup, including a brown ale and an IPA. After that Griffith, who was the head brewer at Golden City Brewery for seven years, will start working on special releases featuring experimental ingredients.

But Fate, which has thirty taps, hasn't been without some of its brewmaster's beers. For the past few weeks, it has been serving collaborations that Griffith did with other breweries around Boulder County: Shine, Twisted Pine, Echo, Wild Woods, Southern Sun, Crystal Springs, Asher, Boulder Beer, Big Choice, Lone Tree and BRU.

Fate is a 230-seat brewpub located in a 7,000-square-foot space; it was founded by Mike Lawinski, who worked at Centro Latin Kitchen and West End Tavern.
