Boulder Baked offers 24 varieties of cookies, including the Kona: a chocolate espresso, macadamia nut and coconut cookie. But this bakery doesn't just sell cookies; it also has whole pies and simple comfort food, like the giant helping of tomato bisque soup served with a grilled cheese sandwich.
The homemade cooking comes straight from the recipes of the Comstock family, which owns and operates the five-year old business. There are days when you may see the entire family working at Boulder Baked, with the husband-and-wife team of Katie and Jim Comstock working in the kitchen alongside their daughter, Kirsten, while their son, Kevin, a University of Colorado student, sets out to make the deliveries. “Kirsten is kinda the primary of the business, “ explains Katie. “She’s always been the dessert queen.”
Boulder Baked offers snazzy care packages for those hectic test times, and can send upwards of ten mini-care packages daily.
“It’s wholesome to send something extra-special that’s homemade,” says employee Jessica Fonseca, also a CU student.
Boulder Baked is located at 1911 Broadway in Boulder and is open daily from 4 p.m. until 2:30 a.m. Which provides the answer to another dilemma.
